Thanksgiving Turkey with Apple Gravy
Whole Turkey 16-20 lbs, save the giblets

Preheat oven to 325ºF, put turkey, breast side up, on a rack in a large roasting pan.
Tuck wing tips under turkey and tie legs close to body with twine.
Take some melted, unsalted butter and brush on turkey, salt inside and out with salt and pepper. 

Roast turkey, do not cover, until the internal temperature in the thickest part of the thigh measures 165ºF. this should take about 4.5 hours
Place cooked bird on platter, cover with a tent of foil and let stand for 15-20 minutes before carving.
Save the liquid in the roasting pan.

To Make Gravy
giblets.
3 cups apple cider
1/2 cup flour
3/4 tsp sage (dried)
5 cups water
1 tsp Black pepper, ground
1 tsp salt

Put giblets in the water and boil, reduce heat and simmer for about 60 minutes, strain through a sieve, throw away giblets, you now have giblet broth.

Skim fat from roasting pan liquid, hold back 1/2 cup.
Add cider to pan and bring to a boil, reduce heat and simmer for 5-6 minutes, amount should be reduced by then.

Over low heat combine the 1/2 cup you held back and flour. cook for a few minutes, stirring constantly.
Stir in cider mixture and giblet broth, increase heat until mixture thickens, add sage , salt and pepper.

Slice turkey and serve with gravy.
