Cowboy Chili


3 lbs beef boneless round steak, cut into 1/2 inch cubes
3 tbls vegetable oil
4 cups water
1 tbls paprika
1 tbls dried oregano
2 tbls cumin
1-2 tsp red pepper
1/2 tsp salt
1 large bay leaf
3 large garlic cloves, crushed
1 large onion, chopped
1 8 oz can tomato sauce
1 cup shredded cheddar
1 cup sour cream
1 medium avacado, chopped



Cook and stir half of the beef at a time in oil in a Dutch oven over medium heat until light brown.
Stir in remaining ingredients, except sour cream, cheddar cheese and avocado.
Heat until boiling; reduce heat.
Cover and simmer 1 hour, stirring occasionally.
Uncover and simmer about 2 hours, stirring occasionally, until mixture thickens.
Remove bay leaf.
Serve with sour cream, cheddar cheese and avocado.
